Here is another fun and easy thing I have been working on for Jingle Bell House this year, these turned out so freakin cute I just couldn’t stand it!

All you need is mini candy canes, large marshmallows, and chocolate to melt.

Melt the chocolate in a bowl, and crush up some of the mini candy canes. Poke a mini candy cane into a marshmallow and dip it into the chocolate, and then dip it in the crushed up candy canes and place it onto a cookie sheet. Let them sit so they harden, and viola! The cutest little things ever to add to your hot chocolate, made from your Hot Chocolate Balls!

Yesterday I spent most of the day shopping for and preparing the things I am planning to sell for my moms holiday house she does called Jingle Bell House. I have so much fun helping my mom every year, and I love also to make some things to sell during the few days.

This year I have decided to make a few little things from the kitchen along with some decorations. I will fill y’all in on all of the fun things I am making, starting with these Hot Chocolate Truffle Balls… funny name, I know.

(This is a horrible picture, but I forgot to take it before I packaged it up. You get the idea.)

What it is a little ball that you drop into 1 1/4- 1 1/2 cup of milk and heat it up and boom, hot chocolate!! So here is how you make them!

What you need:

  • 12 oz (one bag) of semi sweet chocolate chips
  • 1 cup of heavy whipping cream
  • 1 tablespoon of sugar
  • pinch of salt

All you have to do is through this all into a microwavable bowl and microwave it in 1 minute intervals, stirring between each minute. Keep microvwaving until it is fully mixed and very smooth. Let it cool at room temperature for about 10 minutes. Cover and put in the refrigerator for about 2-3 hours. Then scoop out heaping spoon fulls (about 1/4 cup) onto a cookie sheet and put into the fridge again for about 30 minutes, or until hardened. Then take them out and roll them into balls and wrap in plastic wrap (you kind of have to do this part fast or they melt on the cookie sheet.)

Thats ALL! It’s that simple! They are great for gifts, stocking stuffers, or just to have on hand for a quick cup of hot cocoa! Enjoy!

This weekend I had this boy all to myself!! Both of my room mates and Sam went home this weekend, so Tank and I had all weekend to hang out. I wasn’t feeling great most of the weekend but he was more then happy to just lay in bed and cuddle!

This weekend we had great weather here in Corpus, I just love this time of year. The time that the weather starts to get cooler, the time when families and friends get together to enjoy each other, and the time of HOLIDAYS!

I have always associates holidays with family, because I have a big family on both my mom and dads sides. So there is rarely a holiday that we have ever not been with extended family, and I love it. I love entertaining, spending all day in the kitchen cooking with all the girls in the house, enjoying the company and great food, and just relaxing with the people I love most.

Another fun thing about these next couple of months is getting to be super CRAFTY!! I have a lot of family and friends birthdays and then of course Christmas to add on, which means lots of fun crafts and present shopping for me (which I don’t mind at all!) I love the process of thinking through what you are going to make or find for a special someone, spending the time to find the perfect supplies to make it, and then getting to see their reaction when they open it just makes it all worth it.

HINT HINT: There will be a few presents given this weekend for those of you with birthdays Winking smile

Double the Recipes, Double the FUN!

I have two yummy recipes for you today, I made them both last night and they both turned out delicious!

The first one you may or may not have heard of before… Kale Chips. Yeah, I know that sounds kind of weird, and yet very intriguing! So I tried them, and they turned out great. All you need is Kale and any spices you may want to put on top.

Here’s what you do:

  1. Cut the Kale off the stem, and preheat your oven to 350 degrees.

2. Tear it up into pieces (not too small you want them to be able to be “chips”)

3. Throw on some spice and toss those suckers in the oven for about 10-15 minutes, but keep an eye on them so they don’t burn!

And they come out looking like this…

You can eat them with whatever you’d like; hummus, salsa, ranch dressing, pretty much anything. So easy, but so yummy!

 

Now for the second one of the day: Shrimp with Zucchini Pasta/Stir Fry:

Here is what you will need:

– 4 red bell peppers

– 1 sweet onion

– 3 zucchini (more or less or depending however much “noodles” you want)

– 2 tomatoes

– Onion powder and black pepper to taste

– shrimp (you can decide how much you will want in it. I used 2lbs)

How to do it:

  1. To start off, cut your onion and bell peppers and small as you’d like them to be. I like bigger chunks so I did slices.

2.  Put them in the oven at 375 for about 20-25 minutes (just while your doing the rest of the steps)

3.  Peel and slice your zucchini then cut them into strips so they are like noodles. Begin sautéing them with some black pepper and onion powder.

4.  Dice your tomatoes, once the zucchini noodles are soft remove them from the pan, and add the tomatoes and shrimp.

5.  Once the shrimp become cooked and most of the juice has evaporated add the peppers and onions, along with the zucchini noodles.

6.  Allow it all to simmer and mix all together. You can add more spices at this point if you’d like.

This recipe sounded like it would be good in my head and turned out even better than I thought it would! The flavor turned out amazing and not to mention, very healthy! Smile

This Weekend

What a very full and blessed weekend this one was! It started off with everyone including my roommate Lexi’s family, my boyfriend Sam’s mom and a friend of hers, and his cousins arriving Friday night. Then Saturday I started early with getting to see  this amazing sunrise on the way to babysit for a few hours…

After babysitting I met everyone out at Port Aransas on Saturday afternoon for a perfectly hot day on the beach! It was perfect weather to be able to be out there all day long and never get too hot!

Literally not a cloud in the sky!

The boys went to play golf at the Newport Golf Course while the rest of us went and had some appetizers and drinks in Port A followed by walking around to see the fun shops. Port A is such a fun little touristy beach town, if you ever get a chance it is defiantly worth the day trip! We all headed back to Corpus to get all clean and showered and head to dinner to end a great day, and on the way home we go to see this amazing sunset while going over the bridge!

After such a wonderful day what better way to end it than with Mexican food!? We went to a fun restaurant in downtown Corpus called Dos Comales. I have been there once before but just had appetizers so I was excited to try the real food, and it was great! I couldn’t decide on what I wanted to eat so like I do most of the time I had Sam choose an entre for me to grub on for the night, and he chose right (like he always seems to do!) He decided on a chicken stuffed avocado topped with salsa, it was HUGE an it was great! I didn’t want to stop eating even though I was beyond full, there was just no way I could finish it.

It is always a fun time when you have great friends and family with you. We spent quite a long time just drinking and eating and catching up and the time flew by!

Sunday morning everyone woke up in a great mood and with the feeling of knowing how greatly blessed we are. It was our first day of being below 80 degrees here in Corpus Christi this Fall and it was an awesome change of weather! We threw on our jackets and headed to church to witness an amazing thing…This summer Sam’s brother Matt accepted Jesus Christ into his heart for the first time and decided to get baptized this weekend!

It was an amazing and emotional service and just an incredible thing to be there for Matt while he let the whole church know how much Jesus means to him by being baptized!

Go rangers go! We are heading to the play-offs again everybody!

Sam and I have been to two rangers games together in the last 2 years. Our first one was the playoff game last year that Cruz hit a GRAND SLAM! It was incredible, the stadium went crazy, it was like nothing we had ever experienced. This picture is right before it happened!! So glad we didn’t miss it.

Our second game was this summer, my siblings got me tickets for us to go to another game and we were so pumped! All smiles!

We are also both HUGE fans of Josh Hamilton, we both read his book this summer and fell in love with his amazing story and the man he has become through all of his trials throughout his life.  Josh Hamilton is actually a major contributor of the organization Arise Africa which is the same organization we went to Africa with this summer for our mission trip. We thought it was so crazy that we were working with the same organization so we took this picture of Sam in front of the Arise Africa sign to send to Josh, and just haven’t quite gotten to that yet… but it is still on the list of things we need to do! You know that never-ending list…

I can’t wait to see what Hamilton has to say when he receives this picture! And yes, of course that shirt has HAMILTON on the back! Smile

So we are off to the play-offs once again, and I so hope that we will be able to make it to a game again. The energy of being at a playoff game is just incredible, especially when you are cheering for a team full of great guys!

Date Night!

Last night was my turn to plan a date night for Sam and I and it was so fun! I packed a picnic and had the best spot picked out to watch the sunset.

On the way there he was so confused and had no idea where we were going, I LOVED IT! He is the best at guessing my surprises, no matter how long I plan it or how many people I tell or don’t tell, he ALWAYS figures it out. But this time he had no clue where we were going which made it really fun for me.

One of the most beautiful sunsets I have ever seen. It was a great evening we got to just hang out and enjoy each others company. With such crazy schedules we have during the week it is nice on the weekends to just spend time doing nothing together!

Paleo Oatmeal

This is by far one of my favorite breakfasts that I have made while on Paleo. No, it isn’t exactly like regular oatmeal, it’s BETTER! Smile

Ingredients:

  • About 1 cup of nuts per person (you can use whatever kind of nuts you prefer)
  • 1 banana per serving
  • about 1/3 cup almond milk

What to do:

  1. Put the nuts in a blender or food processor and pulse till they are finely ground.
  2. Mash up your bananas and put the banana and the nuts into a sauce pan with the almond milk.
  3. Heat up the nut mix till warm.
  4. Add some fruit and a little more almond milk to it and Bon Appetite!

This morning I added a few strawberries and peaches, it was wonderful! After breakfast I decided to take Tank on a walk and enjoy the beautiful Sunday morning we have here in Corpus this morning. He loved being able to go outside without getting soaking wet like the way it has been the last few days.tank 2

My plans for the rest of the day include hanging out and watching some NFL games before getting back to the real world tomorrow. Have a great Sunday everybody.

Sorry it has been a few days since I have posted, it has just been one of those weekends. It’s a cool and rainy weekend which I feel like always messes up my schedule. When the weather gets gloomy I feel like just slowing down, I want to just lay on the couch, cuddle up with Sam, and watching movies all day. I know, I know.. it almost never happens, that’s just what I wish could happen!

It’s College Football day so Sam is having a guys day with his roommates while I cozy up on my couch and watch some White Collar on Netflix. Has anyone ever seen it, I just found it last week and immediately loved it! Can you really tell me that there is anything better on a rainy day then relax on the couch in some comfy sweatpants and a cup of coffee with never ending shows to watch on Netflix!? I don’t think so…!

The only thing missing is my boy, but he needed his guy time!

Breakfast today was a yummy ezekiel bread breakfast sandwich, and it was delicious!
I used ezekiel bread, (which is awesome, and Paleo!) some homemade grape jelly with no sugar added, 2 over easy eggs and some canadian bacon. I forgot to take pictures, but I think you can imagine what it looked like.

I wish this weekend would keep on going and going, I don’t like the thought of it almost being over!

Paleo lasagna!

I made this lasagna for dinner last night and had it for dinner tonight too, and it was even better! For those of you who don’t know about Paleo, it is the “caveman diet”, though I like to think of it more as a lifestyle. You can eat all the meat, fruits and veggies you want and feel great while doing it! Sam and I have been ‘going caveman’ for about 5 months now and have loved it!

This was a really great lasagna but I will probably add more sauce next time!

What you need:
-3 zucchini
-1 onion
-1 green pepper
-mushrooms
-1.5-2 pounds ground beef (I used 2lbs because we like more hearty meals, but you could use less.)
-homemade tomato sauce(I used about 2 cups this time but I would use more!)
-garlic cloves(however much you like, I used 4)

What to do:
-Chop the onion, pepper, garlic, and mushrooms and through them into a pan to get them sautéing!
-While it is all cooking, peel the zucchini and slice them as thin as possible.
-In the same pan as the vegetables cook the ground beef but just so the rawness is gone — leave it pink cause it will cook in the baking dish.

How to put it all together: (really you can do this however you would like)
-Line the pan with the zucchini slices on the bottom
-Use 1/3 of the beef and veggie mix on top of the zucchini
-Then spoon in some tomato sauce.
-Repeat until you run out of everything!
-Bake at 375 degrees F for about 25 minutes.

ENJOY!!
